Pistachio cold baklava finished with a wild berry topping.
Pure ghee. Stone-ground Gaziantep pistachios. The depth of mountain berries.
Cold Collection
Our Wild Berry Cold Baklava takes the light, silky foundation of our classic Pistachio Cold Baklava — stone-ground Gaziantep pistachios, pure ghee, paper-thin phyllo, and cold syrup application — and crowns it with a generous topping of wild berries. Blueberries, blackberries, and other forest fruits bring an earthy depth and gentle sweetness that complements the nuttiness of the pistachio in a way that feels entirely natural. This is cold baklava at its most abundant: generous, layered, and deeply satisfying.

What Sets It Apart
A generous topping of blueberries, blackberries, and other wild forest fruits covers the chilled baklava, bringing an earthy sweetness and gentle acidity that lift the entire dish. Where the red berry version offers brightness and tartness, the wild berry version provides depth — a darker, richer complement to the nuttiness of the pistachio.
The pairing of stone-ground Gaziantep pistachio and wild berries is an unexpectedly harmonious one. The earthiness they share creates a common thread, while the sweetness of the berries and the richness of the nut create a layered contrast. This is cold baklava with real complexity — a dessert that rewards attention.
Wild berries carry the character of the landscape and season in which they grow — a quality that gives this product a connection to nature that feels distinct from other baklava varieties. The result is something that feels grounded and abundant at once, and unlike anything else in the cold baklava category.
The Craft Behind It
The cold baklava tradition at Saytad began with a simple idea: apply the syrup cold, not hot, and preserve the lightness of the phyllo in a way that hot syrup cannot. From that foundation, the wild berry variation emerged as a natural extension — a way to bring the flavours of the forest into conversation with the most refined nut in Turkish gastronomy.
The baklava itself is prepared in the same way as all of our cold baklava products: stone-ground Gaziantep pistachios layered within hand-stretched phyllo, with pure ghee butter applied between every sheet. After baking, cold syrup is used — rather than hot — to allow the layers to remain distinct and light. The wild berry topping is prepared fresh each day and applied generously over the chilled pieces before serving or packaging.
The result is a product that combines the ancient craft of Turkish baklava-making with ingredients drawn from a different part of the world's culinary heritage. It is one of the more unexpected pairings in the Saytad range, and consistently one of the most talked-about. For guests discovering cold baklava for the first time, the Wild Berry version often proves the most memorable.
