Shredded wheat strands cooked on traditional copper pans.
Freshly chopped Turkish walnuts. Pure ghee butter. Rich, grounding sweetness.
Kadayıf Collection
Walnut Kadayıf is the earthier, more rustic expression of Gaziantep's shredded wheat tradition. Where pistachio kadayıf dazzles with bright colour, the walnut version rewards with depth — fine tel kadayıf strands cooked on copper pans until deeply golden, filled generously with freshly chopped Turkish walnuts and pure ghee butter, then finished with a balanced syrup. The result is a product with a rounder, more complex sweetness and a satisfying, grounding flavour that has endured in Turkish sweet culture for centuries.

What Sets It Apart
Like all great kadayıf, this version is cooked on traditional copper pans that distribute heat evenly, creating the characteristic crispy base and tender upper layer. The copper surface imparts a gentle caramelisation that cannot be reproduced with modern bakeware.
Freshly chopped Turkish walnuts are layered generously between the kadayıf strands, ensuring that every bite carries their distinctive earthy, slightly bitter edge — a perfect counterpoint to the sweetness of the syrup and the richness of the ghee.
Walnuts interact with syrup differently from pistachios — they absorb more, releasing a warmth and depth that makes Walnut Kadayıf a more grounding, comforting product. It is the choice of those who prefer their sweets with character and substance over spectacle.
The Craft Behind It
Before pistachios became the internationally celebrated symbol of Gaziantep's sweet culture, walnuts were the filling of choice in homes and small shops across Anatolia. Walnut Kadayıf carries that older, quieter tradition — a product rooted in the everyday rather than the ceremonial, and beloved precisely for its accessibility and honesty.
At Saytad, we prepare Walnut Kadayıf the same way we do all of our shredded wheat products: fresh tel kadayıf is spread across copper pans, layered with freshly chopped Turkish walnuts and pure ghee, and cooked until the base achieves a deep, even golden colour. The tray is then flipped and syrup is applied with care — just enough to bind the strands and complement the walnut filling without overwhelming it.
The result is a product of quiet confidence: not decorated, not elaborate, but deeply satisfying. Customers who grew up with Walnut Kadayıf often describe it as the taste of a Turkish grandmother's kitchen — warm, familiar, and made with nothing hidden.
