Our Vegan Walnut Baklava uses every element of the classic baklava process — paper-thin phyllo, freshly crushed walnuts, golden baking — but replaces the animal-derived ingredients with equally considered plant-based alternatives. Vegetable oil stands in for ghee, and a natural date sherbet replaces the conventional sugar syrup, adding a deeper, more complex sweetness with no artificial additives. Natural Date Sherbet

The most distinctive element of this product is the date juice sherbet. Made from concentrated date extract rather than refined cane sugar, it provides the necessary sweetness and moisture while offering a depth of flavour — earthy, caramel-like, subtly complex — that conventional sugar syrup cannot match. It also means no refined sugar and no artificial additives of any kind.

No Compromise on Craft

The same hand-rolled phyllo technique, the same careful layering, the same copper-pan baking method — everything that defines Saytad baklava is preserved in this vegan version. The only changes are the fat source (vegetable oil instead of ghee) and the sherbet (date instead of cane sugar). The craftsmanship is entirely unchanged.

The Walnut Difference

Walnut brings a different character to baklava than pistachio: earthier, more robust, with a slight bitterness that plays well against the sweet sherbet. Freshly crushed rather than pre-ground, the walnuts in this baklava retain their oils and natural flavour. Combined with the date sherbet, the result is a baklava with real depth — rich without being heavy.

Vegan Walnut Baklava: Tradition Reimagined

Traditional Turkish baklava relies on two animal-derived ingredients: ghee butter, which provides richness and the characteristic flakiness of the phyllo, and sugar syrup, which provides sweetness and moisture. For Saytad's Vegan Walnut Baklava, both are replaced — but not substituted arbitrarily. Each alternative was chosen for what it contributes to the finished product, not merely what it avoids.

Cold-pressed vegetable oil was selected as the fat source because, when applied between paper-thin phyllo sheets, it provides the lightness and crispness that the finished baklava requires. Date juice sherbet was chosen because dates have been part of the broader culinary tradition of the Middle East and Anatolia for millennia — using date sweetness in baklava is not a modern invention but a return to older, less refined methods of preparation.

The walnut filling is freshly crushed each morning, just as in our conventional walnut baklava. The layering is identical. The baking is identical. What you receive is a product that is, in every practical sense, the full baklava experience — available to those whose diet does not include animal products, without asking them to accept a lesser version of it.
