Every sheet of phyllo is brushed with 100% pure clarified butter — no blends, no shortcuts. The result is a richness of flavour that vegetable oil alternatives simply cannot replicate, and a crispness that endures.

The Craft Behind It
The square-cut baklava is the most recognised form in the Gaziantep tradition — a clean, generous piece that showcases the layers of phyllo and the filling within. At Saytad, we decided that "standard" was not enough. Our Special Square uses a visibly higher proportion of stone-ground pistachios, giving each piece a vivid green interior and a depth of flavour that distinguishes it from the everyday.
The process begins with our hand-stretched phyllo dough — each sheet pulled thin by skilled hands rather than machine, maintaining the irregular texture that holds the syrup beautifully. Layers of dough are interleaved with pure ghee and the extra pistachio filling, then baked slowly at a controlled temperature until a deep, even golden colour is achieved throughout.
After baking, our light syrup is poured over the hot baklava, allowing it to penetrate every layer without pooling or making the pastry heavy. The balance between sweetness, butter richness, and pistachio flavour is what we protect in every batch — and what makes the Special Square a product we are proud to put our name on.
