The Pistachio Roll — known as dolama or sarma in Gaziantep — is where technique meets abundance. Ultra-thin phyllo sheets are rolled tightly around a generous core of stone-ground Gaziantep pistachio, then baked in pure ghee until the outside shatters at the first bite while the interior remains richly nutty and satisfying. Each roll is shaped entirely by hand.

  • Sugar syrup Local beet sugar produced in Turkey, water, a few drops of lemon juice to prevent crystallisation
Note on sourcing: No artificial flavourings, colourings or preservatives are used in any Saytad product. Pistachios are sourced fresh each season directly from Gaziantep. All ingredients are traceable.

At Saytad, our pastry team rolls each piece entirely by hand before placing it in copper trays. Generous amounts of ghee are applied before baking. After leaving the oven, each tray receives a measured pour of our signature light syrup — enough to add sweetness and moisture without overwhelming the roasted character of the pistachio.
