Bohça — the Turkish word for a bundle or parcel — describes a kadayıf preparation in which shredded wheat is wrapped around a filling rather than layered beneath it. At Saytad, the filling inside our Bohça Kadayıf is pistachio cream made from fresh milk: a rich, smooth mixture of stone-ground Gaziantep pistachios and freshly prepared cream that transforms the product from a crunchy pastry into something closer to a petit dessert. The tel kadayıf parcel is cooked in pure ghee until golden, then finished with syrup — the exterior crispy, the interior creamy.

Bohça means bundle in Turkish, and that is precisely what this product is — a neatly wrapped parcel of tel kadayıf with a surprise inside. At Saytad, our Bohça Kadayıf is filled with a pistachio cream prepared fresh each morning from whole milk and stone-ground Gaziantep pistachios. The tel kadayıf is wrapped around this filling, sealed, and then cooked in pure ghee until the exterior achieves a deep golden crispness. The contrast between the crunchy shell and the cool, silky cream inside is the defining characteristic of this product.
Because the filling contains fresh milk cream, Bohça Kadayıf has a shorter shelf life than our other products. This is not a limitation — it is a statement of integrity. Fresh cream cannot be stabilised without additives, and we use none. Purchase it, refrigerate it immediately, and enjoy it at its best within a day or two.
